Right now, the simple answer is you can't.

To add a new folder, you will need to use the web interface of your email provider, and it will sync with the mail app.

So if you're using Outlook.com or Gmail...sign in to their web service, create the new folders, and then they will show up in the Windows 10 Mail app.

Yeah, there are small things like this, and the fact you can't change the reading view, that show there is improvement still needed in the Mail app. I am sure we'll see it over time.

I have a Hotmail account. On my e-mail page at the top it says Outlook Mail (Preview) . How do I get rid of this (Preview) thing? The e-mail program doesn't work properly with that setting.
